As the sun nears the Aegean, the garden slows down: plates arrive at the table, glasses are filled, conversations soften. In the golden hour that begins about an hour before sunset, the light turns first to honey, then to copper; when the last sliver disappears on the horizon, a brief hush falls over the garden all by itself.
Then comes the blue hour: the sea deepens, the candles are lit and, from Thursday to Sunday, the first notes rise from the stage. If you want to take in the evening whole, book your table for 19:30; first the show of light, then the music.
